Job Description
Responsible for the successful culinary production operation under the direction of the Manager.
Direct the preparation, seasoning and cooking of salads, soups, fish, meats, vegetables, desserts. He/She should have experience about Latin-American cuisine. Supervises and participate in cooking and baking and the preparation of foods. Must participate in checking of all purchased supplies for quality and account for each delivered item. Adheres to HACCP guidelines to ensure efficient, safe and sanitary food production, preparation and presentation. Additional duties may include menu development, inventory, ordering/purchasing, food cost controls, training, sanitation, and personnel management to include hiring, firing, counseling, coaching and developing.
Detailed Work Activities:
Must expedite the pass through the cook’s window to maintain proper consistency in food quality and service between the hours of 9:00 – 1:00 P.M. and 3:00 – 9:00 P.M. from Monday to Thursday and 9:00 - 1:00 P.M. and 3:00 - 10:00 P.M. from Saturday and Sunday.
