Chef de Cuisine Location: US-NV-Las Vegas Email this job to a friend

Run all aspects of daily Back-Of-House (BOH) operations including but not limited to; managing staff schedules and station assignments, ordering and receiving product, preparing prep lists and instruction for the team, quality checking product during all stages of preparation, general oversight of production and service, conducting regular internal health and safety inspections, managing daily food cost and spend; Maintain food cost, labor cost, supply cost, and other controllable expenses within budget guidelines; Ensure food is handled and is processed and stored in accordance with Southern Nevada Health District (SNHD) regulations; Adhere to and enforce company policies and statutory requirements with regards to health and safety, sanitation, fire procedures and Hazard Analysis Critical Control Point (HACCP). Preparing ingredients, cooking, food controller, food handling, inventory management, ordering ingredients. Use of slicers, mixers, oven, stove, wok burner, steamer, boiler, duck oven, duck drying machine. Knife skills, ladle skills, all other kitchen tools.
Requirements:
Two (2) years of experience in the job offered or as a Line Level Supervisor, Senior Chef de Partie, or Chef, plus two (2) years of experience working in Chinese Haute Cuisine, which includes: Mise en place, a specialized culinary discipline in which all ingredients must be measured, cut, peeled, sliced and grated prior to cooking; duck preparation and the proper utilization of roasted duck ovens in adherence with local health regulations and safety standards; Master Wok expertise which includes stewing, steaming, boiling, deep-frying and sauce preparation; and managing all BOH (back-of-house) operations including managing staff schedules and station assignments, ordering and receiving product, preparing prep lists and instruction for the team, quality checking product during all stages of preparation, general oversight of production and service, conducting regular internal health and safety inspections, and managing daily food cost and spend.
