Who You Are:

Figure 8 is looking for our first-ever Executive Chef, Elevated Food Truck to join our experience-first-team. You are thoughtful and ambitious, confident in leading and coaching a small team of sous chefs and line cooks. To be considered for this role, you are a passionate, detailed oriented chef, a strategic operator, and a true hospitality lover that appreciates the power of imagination and connection through food! Experience in food truck operations is a necessity. You are also comfortable being in charge of the food operations, including developing, sourcing and procurement, for an elevated comfort food menu, plus packaged picnic and cafe menu.

What You Will Do:

You will have direct oversight over the locations menu strategy, operational budget, F&B execution, and reaching financial goals. You will lead a team of 1 sous chef and 2-3 line cooks. You must be extremely ambitious, able to manage competing tasks, and work with the company C-suite on food programming and P&L targets. You must have full availability to work weekends on a consistent basis in a 7 day operation.

FOOD HOSPITALITY

  • Deliver a best in class, photographable and efficient food experience that is a destination in Austin, known for elevated comfort foods and picnicking
  • Deliver an innovative food program and seasonal menu roll-out to ensure guest satisfaction and quality of experience
  • Work to build sustainable business practices, including no single use plastics, avoid seed oils and incorporate a strong plant-based offering with the core menu
  • Develop and maintain standard operational procedures, systems and processes specific to the truck and all operations including cleaning, maintenance and appearance to efficiently run truck operations
  • Ensure above bar health and safety practices for all employees and guests, by establishing, following, and enforcing sanitation standards and procedures including food handling, storage, and temperature; complying with all legal and health regulations
  • Assist in the maintenance of proper emergency and security procedures
  • Ensure strong focus on guest satisfaction with the ability to effectively resolve complaints from customers in a friendly manner
  • Support people growth and manage a best in class team, including growth paths and structure of quarterly trainings and seasonal preparations
  • Proactively maintain human resource processes and procedures, including hiring, timeclock entry, training, scheduling, wage and benefits administration, and compliance with established labor regulations, performance reviews, etc
  • Evaluate the performance of all suppliers, vendors, contractors and team
  • Report on sales results and top line, cogs and profitability measures weekly
  • Identify, solve, and/or escalate sales driving or profit maximizing opportunities, and protect the business in response to extenuating incidents
  • Ensure strong inventory management and supplier controls
  • Monitor food, beverage, labor and operating expenses throughout the develop budgeting processes to reduce loss and waste

The salary range for this role is $65,000 - $85,000 USD

Requirements

The Necessities:

  • You have extensive F&B experience and ability to operate out of tight truck or container kitchens
  • You have 5+ years of restaurant/bar chef experience
  • Food Handler / ServeSafe certification required
  • TABC certification
  • You are a strategic leader and Chef that is enthusiastic about bringing a team together and consistently managing all performance expectations and team deliverables
  • An attitude of no job is too small whether cooking, busing, serving cleaning to help the operation
