The iconic Slows Bar BQ, a Detroit based barbecue institution, is seeking a Full Time Pitmaster to join our rockstar team. As the Pitmaster, you are responsible for preparing and executing the impeccably smoked meats that are the core of the menu and the heart of the brand. In this role, you will work alongside our experienced hardworking culinary team that specializes in chef-driven barbecue cooked fresh daily. This position will be in our main commissary kitchen at Slows To Go in Midtown Detroit. Slows To Go feeds our flagship Corktown location, all Slows Catering, our immensely popular food trucks and all other offsite operations.

Responsibilities

• Operate and maintain the smoker pits to ensure the highest quality of smoked meats according to specifications.
• Manage the daily production of meats according to Company recipes and standards.
• Ensure proper storage and rotation of all meats, including proper wrapping, labeling, and dating.
• Keep an accurate inventory of all products and communicate with the culinary team regarding usage and stock needs.
• Maintain the cleanliness and sanitation of the smoker pits and surrounding areas.
• Work closely with the culinary team to execute menu items with efficiency and accuracy.
• Ensure all equipment is in proper condition

Requirements

• Excellent knowledge and experience with the process of transforming meats with wood smoke.
• At least 2 years of experience in a high-volume, upscale restaurant environment.
• Ability to lift heavy objects, stand for long periods of time, and work in a hot environment.
• Strong communication skills and the ability to work in a team.
• Passion for food and a keen interest in the culinary arts.
• Knowledge of health and safety guidelines and the ability to adhere to them.
• Flexibility to work days, nights, weekends, and holidays as needed.
