The Culinary Department provides exceptional dining experiences for all guests and visitors. The Culinary Operations Manager manages daily kitchen operations under the direction of the Executive Chef. This position will focus on financial objectives around labor management and cost controls including oversight of product ordering and inventory, scheduling and time management, sanitation and compliance logs, and oversight of staff performance and development to consistently achieve optimal results. The Culinary Operations Manager will maintain high levels of safety, sanitation, and productivity to obtain guest satisfaction.

A typical day for the Culinary Operations Manager may include the following responsibilities:

  • Allocate labor and prioritize tasks to efficiently deliver service and accommodate fluctuating business levels. Determine and assign daily tasks and oversee productivity and workmanship.
  • Engage staff through the following means: open and efficient communication; providing tools and information required to effectively perform job functions; ensuring reasonable workload; and creating opportunities for fun and creativity.
  • Actively manage food cost through effective controls including proper purchasing, storage, use and waste reduction. Partner with the Purchasing Department to order products in a timely manner to support service.
  • Maintain sanitation and preventative maintenance schedules for kitchen equipment. Track, record, and maintain inventory stock of cleaning supplies, products, and equipment.
  • Fulfill all administrative tasks including accounting procedures, OSHA training and HR records.

Requirements

The ideal candidate will be able to forecast, plan and manage all culinary objectives under the direction of the Executive Chef, to collectively meet the goal of maximizing sales and revenue through customer satisfaction and employee engagement. The ideal candidate has previous managerial experience in a hotel restaurant or equivalent setting, preferably with labor relations.

The ideal candidate will also possess the following knowledge, skills, and abilities:

  • The ability to speak, read and write proficiently in the English language.
  • Proficiency with Microsoft Office products and the ability to operate Birchstreet purchasing software.
  • Strategic management skills including effective multi-tasking ability to oversee multiple positions and job tasks simultaneously.
  • Excellent communication skills through various methods including phone etiquette and proficient written communication skills.
  • Strong working knowledge of culinary industry practices and trends.
  • TB clearance and valid Drivers License required.
  • Availability to work a variety of shifts including days, evenings, weekends, and holidays.
  • As a condition of employment, candidate must be able to satisfy all pre-employment screenings including criminal background check, drug screening and personal and professional references.
