Who You Are:

Museum of Ice Cream is looking for our next Director of Food and Beverage Operations to join our fun-filled team. To be considered for this role, you are a strategic operator, a hospitality and experience lover and truly understand the power of imagination and connection! You need a strong background in food and beverage, strategy, operations, and finance. You take great pride in delivering a memorable guest experience through maintaining a seamless operation.

Your Day-to-Day:

  • Develops a purchasing strategy for all sites, working with national partners with a focus on getting economies of scale and pricing.
  • Create and maintain site level product strategy (core, seasonal, special event etc), which is consistent across multiple sites.
  • Developing and maintaining relationships between locations to ensure quality and continual growth.
  • Implements company wide alignment in food and beverage operations and its relationship with other departments.
  • Implement the strategic food and beverage goals and translate them into tactical plans, developing menus and analyzing and adjusting menus as needed.
  • Help to find and develop relationships with vendors and possible partners to expand the MOIC brand and reach with product development and f&b experiences.
  • Oversees company wide procurement negotiations.
  • Monitor national and regional F&B trends to ensure food and beverage operations remain relevant and develop distinctive or signature services and products that can provide a degree of separation from our competitors
  • Form and manage partnership with marketing to build loyalty of existing guests and attract new ones through food and beverage offering.
  • Ensure the food and beverage menu and operations are providing and delivering a consistent, high level of service and quality of products based on established company standards and customers' expectations.
  • Ensure the hospitality and experience standards of serving quality treats, and continue to improve those standards to delight guests.
  • Maximize revenue and profit while maintaining the quality, standards and integrity of our food & beverage selection.
  • Leads efforts in procurement of food and beverage items.
  • Creates vendor relationships in food and beverage based on needs.
  • Directly coordinates/oversees food and beverage operations in all MOIC locations ; periodically conducting inspection of equipment and food and beverage spaces to ensure compliance with health, safety and food handling.
  • In partnership with site leaders and operations partners, monitors the cost of goods and services, including but not limited to food, beverages, inventory counts, supply costs, projections and labor costs to make sure budgets are always maintained.
  • Establishes and ensures all MOIC standards are met/exceeded for all food and beverage offerings, including building documentation, checklists and trainings to support meeting these standards.
  • Ensures each treat station at site has treat description, allergy information for quick reference.
  • Responsible for training and onboarding of new F&B managers along with GM.
  • Works directly with on-site management to ensure that day-to-day food and beverage operations are met and kept to MOIC standards.
  • In partnership with site leaders, ensures site teams have proper training on all equipment (cleaning, breakdown, set up, warranties).
  • Oversees all equipment purchases as well as training on equipment usage and maintenance.
  • Creates cadence of reporting for month-end inventory along with site managers and accounting.
  • Supports the Creative F&B Lead in testing items at site prior to official execution and ensures that all standards, procurement and sourcing needs, operational manuals, training guides, plus COG and budgets are met.
  • Trains all team members in the proper production and execution of all food and beverage items, lead regular F&B retrains with assistance of site and operations leaders.
  • Ensure weekly check in with site GM, creative lead and related team members.

The salary range for this role is $90,000 - $110,000 USD dependent on location and experience.

Requirements

The Necessities and Nice-to-Haves:

  • Must have knowledge of F&B preparation techniques, health department rules, and regulations, liquor laws and regulations
  • Six (6) years of relevant experience with a minimum of three (3) years as a manager/director in a high-volume Food & Beverage operation
  • Bachelor's degree or equivalent experience is required
  • Ability to interpret financial and operational data into operational plan
  • Technology proficient (Able to confidently navigate google drive, excel, POS
  • systems, and comfortable teaching these systems to others)
  • Patient, intuitive, honest, and kind to all
  • Ability to prioritize and plan work activities, be detail-oriented, organized, and maintain confidentiality
